The Temperature Rule
Serving temperatures: - Fresh cheeses: Cool, 46-50°F (8-10°C) - Soft cheeses: Room temperature, 65-70°F (18-21°C) - Semi-hard cheeses: Cool room temperature, 60-65°F (15-18°C) - Hard cheeses: Room temperature, 65-70°F (18-21°C) - Blue cheeses: Slightly cool, 55-60°F (13-15°C)
Timing: Remove from refrigeration: - Soft cheeses: 1 hour before serving - Semi-hard: 30-45 minutes before - Hard cheeses: 45-60 minutes before - Blue cheeses: 20-30 minutes before
Hot climate adjustment: Shorter times in warm weather; use marble boards to keep cool
